Lime Rub Shrub

Inspiration 

Rum, brandy, and limes were popular import items for Albany as evidenced by the frequent appearance of these goods in mid eighteenth century family account ledgers. A punch like Lime Rum Shrub (from the Arabic shurb, meaning drink) made from sugar, water, dark rum, and fresh lime juice, not unlike the modern gimlet, was a favorite drink of the Van Rensselaers.

Mixology

Sugar
Water
Dark Rum
Fresh lime juice
(2 parts rum to 1.5 parts lime cordial)

Mix fresh lime juice with simple syrup made from sugar and water.
